dc.description.abstract | Se sometió la guayaba (Psidium guajava L.) variedad manzana a secado con aire caliente a 40, 50 y 60°C, y se evaluó la incidencia de la temperatura en la Capacidad de Rehidratación (C.R), la Capacidad de Retención de Agua (C.R.A), la Capacidad de Adsorción de Lípidos (C.A.L) y el contenido de Vitamina C. La C.R aumenta con las temperaturas de secado y las temperaturas de inmersión, con excepción de 80°C para la guayaba deshidratada a 50 y 60°C; la Vitamina C se degrada entre un 64.02 y un 74.98% a las diferentes temperaturas de secado. | spa |
dc.description.abstract | The drying characteristics of guava (Psidium guajava L.) variety apple were investigated at 40, 50 and 60°C with hot-air. The incidence of the temperature was evaluated in the rehydration capacity (RC), water retention capacity (WRC), fat adsorption capacity (FAC) and the content of vitamin C. Rehydration capacity increases with drying and immersion temperatures, except 80°C for dehydrated guava at 50 and 60°C, vitamin C demeans between 64.02 and 74.98% for different drying temperatures. | spa |
